Blue Mampie Land Crab Buck-buck Crayfish-type Lobster
Grunt Janga (crayfish, crawdad) Mackerel
Mud fish Piper Red snapper
Shad Sea Urchins (Eggs)  Herring Spratt

RECIPES

CURRY LOBSTER

ESCOVITCH RED SNAPPER or TILAPIA FILLETS

Ingredients:
6 Fillets
3 cloves Garlic chopped
2 tsp chopped Ginger
1/4 tsp Rosemary powder or equiv
1/4 tsp Thyme powder or equiv
1/2 cup white or malt Vinegar
1/2 cup Olive oil or equiv
(optional: 1 Scotch Bonnet/Habanero pepper)

Cooking Instructions :
In a small bowl, mix the Garlic, Ginger, Rosemary, Thyme
Pour Olive oil into Medium Skillet and heat over medium fire
Lightly cook each Skillet until each one is white (cooked)
Place each Fillet into a large Serving Dish and cover it

After all Fillets are cooked:
Pour the Spice mixture into the hot Skillet
Heat and Stir the mixture into the hot oil for a minute
Pour the Vinegar into the Skillet to make the Escovitch Sauce
Stir the Escovitch Sauce for 2 minutes until boiling

THEN:
Pour the Escovitch Sauce over the Fillets in the Serving Dish
